I’ve been working very hard as of late to eat healthier. I’d say it has to do with the changing season, but San Francisco is basically perpetually fall. I find I just feel better when I’m paying attention to what I’m eating and drinking and when I limit certain things (gluten, sugar, dairy) I tend to have more energy, feel lighter and cleaner, and just better about myself in general.

So, I’ve started to embark on the journey that is “Zoodles” (zucchini noodles combined in a cutesy way like Brangelina or Kimye). Two weeks ago, I made what I thought would be a great pasta sauce on top of some yellow squash zoodles. Needless to say, the sauce was pretty terrible which, in turn, just made me want to eat a big bowl of glutenous spaghetti.

Last night, however, I didn’t follow a specific recipe and I made, quite possibly, the best zoodle dish in the history of ever (IMHumbleO). Here’s my take on Shrimp Scampi: Zoodle-Edition.
 

Ingredients:

  • 5 zucchini put through a spiralizer
  • 1lb uncooked shrimp
  • 5 cloves garlic thinly sliced
  • 2 TB butter or ghee
  • 4 TB fresh lemon juice

Making the Magic:

Sauté garlic in 1 TB butter. Add shrimp and cook through. Season with salt and pepper (or use salt-free Mrs. Dash). Add 2 TB lemon juice. Sauté a bit longer then add in the zoodles and the rest of the butter and lemon juice. Cook for a bit longer (not too long, you want the zoodles to be “al dente.”

 

Serve and eat!
